Bessie Snow is the owner of Volstead's Emporium.  A queer artist, producer, and hospitality entrepreneur originally from Los Angeles, California, she has been an active member of the Twin Cities arts community since 2021.

As a woman of Japanese and Black heritage, Snow's cultural background shapes her approach to hospitality, entertainment, and community-building. She believes hospitality is an act of care and that gathering spaces play an essential role in building community, preserving culture, and creating a sense of belonging.

Fun fact: despite being a fixture in the nightlife scene and performing burlesque in front of packed audiences, Snow is naturally introverted and remarkably shy.

Chef Marisol runs the culinary heartbeat of the speakeasy—where fine dining meets a little rebellion. Her food is all about storytelling with an edge: bold flavors, global influences, and unexpected twists on the classics you think you know.

Drawing on culinary travels and Puerto Rican roots, Chef Marisol builds plates that hit with color, heat, and soul—while keeping sustainability and accessibility at the core. Nothing pretentious. Nothing wasted. Just smart, creative cooking that turns familiar dishes into something worth whispering about.

In this hidden space, Chef Marisol creates a dining experience that’s playful, intimate, and unforgettable—one surprising bite at a time.
